Instant Pot Baked Ziti

A one-pot whole wheat pasta and spinach dinner with marinara sauce and melted cheese. Vegetarian and ready in under 25 minutes.

Method

  1. Select sauté mode. Once hot, add oil and garlic; cook 1 minute until golden.

  2. Pour in water and salt, scraping the pot bottom to loosen any stuck garlic.

  3. Stir in spinach and pasta.

  4. Spread marinara sauce evenly over the pasta without stirring.

  5. Cover and pressure cook on high for 7 minutes.

  6. Quick release the pressure. Open the lid and stir. Dollop ricotta over the pasta, then sprinkle Pecorino and mozzarella on top.

  7. Cover and let sit 3–4 minutes until cheese melts.

Notes

Do not stir after adding marinara—this allows the pasta to cook properly under pressure.

For creamier results, stir the ricotta into the pasta before topping with hard cheeses.

Leftovers store covered in the refrigerator up to 3 days; reheat gently with a splash of water.
