Instant Pot Lentil Tacos

Method

  1. Combine lentils, broth, salsa, onion powder, garlic powder, chili powder, cumin, and diced tomatoes in the Instant Pot; stir well.

  2. Lock the lid and set the valve to sealing.

  3. Pressure-cook on high for 15 minutes.

  4. When the timer sounds, place a towel over the valve and move it to quick-release position to vent all pressure.

  5. Open the lid and gently stir the lentils.

  6. Let cool slightly while you arrange toppings.

  7. Spoon the warm lentil mixture into tortillas and top with cheese, avocado, cilantro, green onion, olives, sour cream, and salsa as desired.

Notes

Green or brown lentils hold their shape better than red varieties; do not substitute without checking texture after cooking.

For extra heat, use spicy salsa or hot sauce; adjust seasonings to taste before serving.
