Smoked Sausage and Potatoes with Green Beans

Method

  1. Set pot to sauté mode and heat the olive oil for 1–2 minutes.

  2. Add onion and sliced sausage; cook for 2–3 minutes until sausage browns and onion softens. Press cancel to turn off sauté.

  3. Pour in the appropriate amount of chicken stock (1 cup for smaller models, 1½ cups for 8-quart) and scrape the bottom of the pot to dissolve browned bits.

  4. Arrange cubed potatoes on top of sausage, sprinkle with Cajun seasoning, then add drained green beans.

  5. Seal the pot lid and set the vent to sealed.

  6. Select high pressure cook mode and set time to 2 minutes.

  7. After cooking finishes, allow pressure to drop naturally for at least 5 minutes, then carefully switch the vent to quick release mode and move your face away from escaping steam. Alternatively, allow full natural pressure release.

  8. Stir and serve.

Notes

Use 1 cup broth for 3 or 6-quart pots, 1½ cups for 8-quart to ensure proper pressure cooking.

For extra tenderness, use potatoes of uniform size so they cook evenly.
