Instant Pot Vegetable Lo Mein
A vegetable-based lo mein with noodles and crisp vegetables in a savory sauce, cooked under pressure in about 20 minutes.

Whisk together in a bowl: sesame oil, ginger paste, garlic, soy sauce, vinegar, chili paste, brown sugar, and broth. Taste and adjust seasoning as needed.
Break spaghetti in half and place in the Instant Pot.
Pour the sauce mixture over the noodles. Arrange cabbage, carrot, bell pepper, and scallion whites on top (reserve broccoli).
Seal the pot, set to manual high pressure for 4 minutes.
When cooking ends, release pressure immediately by moving the valve to venting.
Carefully open the lid. Stir the noodles thoroughly with tongs to separate any clumps. Add broccoli florets, stir to combine, season with salt and pepper to taste, then close the lid (no pressure) for 5 minutes to soften the broccoli.
Open the lid, top with reserved scallion greens and sesame seeds if desired, and serve.
Notes
Cut broccoli into small pieces so it cooks through in the residual heat without pressure.
Spaghetti can be substituted with thicker chow mein or hakka noodles; adjust cook time if using noodles significantly thicker than spaghetti.
Store leftovers in the refrigerator for up to 3 days; reheat gently with a splash of water or broth.
