Instant Pot Vegetarian Chili
A hearty vegetarian chili made with quinoa, sweet potatoes, black beans, and kidney beans seasoned with chili and cumin spices.

Add olive oil to a 6-quart Instant Pot and switch to sauté mode. Once hot, add diced onion and cook until it begins to soften, about 3 minutes. Stir in sweet potatoes, bell pepper, garlic, chili powder, chipotle chili powder, cumin, and salt. Cook 1 to 2 minutes more until fragrant.
Pour in half the vegetable broth and stir, scraping the pot bottom to prevent a burn warning. Add remaining broth and quinoa, then pour tomato sauce on top without stirring.
Cover and seal the pot. Set to high pressure for 8 minutes. Once done, release pressure immediately and carefully open.
Turn off the pot and stir in black beans, kidney beans, and sugar. Replace the lid and let sit 10 minutes to thicken. Uncover, taste, adjust seasoning as needed, and serve with desired toppings.
Notes
Scraping the pot bottom after adding the first broth portion prevents false burn warnings.
The 10-minute rest period allows the chili to thicken without additional cooking.
Customize toppings with avocado, cilantro, cheese, tortilla chips, or Greek yogurt.
